Christmas Madeleines on Advent
It's the first day of advent - the best part of Christmas for so many. Here's a recipe that will make this December even better
Christmas Madeleienes
250 gr butter
250 gr confectionary sugar
100 gr almond flour
25 gr cocoa powder
7 egg whites
75 gr flour
Zest of one orange
Start off by melting the butter in a pot over medium heat until it starts to boil. Continue melting the butter until it turns a brown colour and starts to foam, and giving off a nice hazelnut scent. Remove the pot from the stove and let it cool down. Sift together Confectionary sugar, Almond flour and Cocoa powder and mix together with the egg whites. Once that is done add the butter to the mixture. Lastly, add the Flour and the zest.
Let the mixture cool down for an hour before adding them to the Madeleine tin. Heat the oven to 170°C (350 F) Fill the each cavity half way ( the Madeleines will double in size). Bake in the oven for about 8-10 minutes. If the mould is large, they could require more time in the oven or up to 15 minutes. Remove from the oven and immediately remove from the mould and let them stand for about 10 minutes. Serve with hot cocoa.
