Chocolate-Caramel Craters

It’s Pride week in Iceland! The sun is shining and our Head Chocolate Maker Kjartan has created Chocolate-Caramel Craters that are guaranteed to blow your mind.

This is the perfect recipe to share with your favorite chocolate addicts– if there are any left before your loved ones show up.

Chocolate-Caramel Craters (12 cookies)

Ingredients

1 can Condensed milk

120 grams Omnom Caramel + Milk chocolate (2 bars)

50 grams Butter

50 grams Sugar

50 grams Flour

2 Eggs

1 teaspoon Vanilla extract

1/4 teaspoon Baking powder

1/4 teaspoon Sea salt

Method

Caramel

Place the can of condensed milk in a pot of water and make sure the water covers the can. Boil for 3-4 hours. Make sure to add water to the pot if needed to keep it covered. When removing from the pot, make sure to let it cool down for at least 2-4 hours before it’s opened.

Cookies

Set the oven to temperature 180°C.

Chop the chocolate into small pieces and add to a bowl with the butter. We recommend melting the chocolate using a double boiler.

Beat together sugar, eggs, and vanilla extract together in another bowl. Once together, add to the chocolate mix and continue to stir.

Sift the flour, baking powder, and salt and then add it to the mixture.

On a parchment paper lined oven pan, drop tablespoons of dough (make sure they are about 3-4 cm wide). Leave at least 4 cm of space between each cookie for baking.

Wet a teaspoon and press down the center of each cookie to create a small crater.


Put a teaspoon of caramel into the crater. Bake for about 8-12 minutes. Add sea salt over the cookies after removing from the oven and then let cool for at least 10 minutes before serving.
